Nicholson & Saville is a Sydney based food wholesale business that has been trading since 2005. Nicholson and Saville was born after recognizing there was a need for a company to represent boutique local producers who were not given proper representation in the market place by existing wholesalers. Relationships were formed with producers and so began partnerships that saw new products born to meet the needs of Sydney chef’s.
The business became much more than simply the marketing of existing products. Through the innovation of local products, often using European products as inspiration, alternatives to specialty imported foods were created. From the first Australian produced Ligurian olives or the caramelizing of vinegars to convincing Sydney chefs that they should all be using pink salt.
